Homemade Strawberry Lemonade

The first time I ever tried Strawberry Lemonade was at Chilis. I went to dinner once with friends, and in the many times we went there as college students, I never noticed the drink before until the waitress mentioned it. I really thought it would be a disgusting Hi-C drink, but when the waitress bought it out, it contained strawberry puree. I was in love. I’m sure it had 900 calories a glass, but it was just SO good and sweet! Now, I don’t go to Chilis as much anymore, but whenever I end up there, I have to have it! I’m sure some of y’all are judging me for liking something at Chilis, but just give me a little slack here. 🙂 I think the last time we ate at Chilis was several months ago…it’s definitely not a place we frequent.

A while back, I saw this recipe for homemade strawberry lemonade. I waited until strawberry season came around, bought a bag of lemons, and made a pitcher of the stuff. Let’s just say I had three glasses of this in a row that evening. This stuff is GOOD and super easy to make!

Homemade Strawberry Lemonade

Ingredients:

  • 1 cup sugar
  • 1 1/2 cups of water, divided
  • 1 pint fresh strawberries
  • 1 cup fresh lemon juice (about 8-9 small lemons)
  • 4-6 cups cold water (I used 5 cups)

Directions:

  1. In a small saucepan, combine the sugar and water. Make a simple syrup by heating and occasionally stirring the mixture on medium heat until the sugar is dissolved. Allow the mixture to fully cool before doing the other steps.
  2. Puree the strawberries in a blender or food processor with 1/2 cup of water.
  3. In a large pitcher, add the strawberry puree, cooled simple syrup and lemon juice. Stir the mixture until everything is well-mixed.
  4. Add 4 cups of cold water and taste. If you feel the lemonade needs more water, add it a cup at a time until the lemonade tastes great to you!
  5. Stir the lemonade really well and serve it over ice.

Note: It lasted about 2 days in the fridge (since I finished the pitcher by then), but it may last longer.

Brunch Week

It has been a crazy year so far. I decided to let my blog sort of fall in the background of my life again, and I’m a bit bummed about it. So many things have been happening this year, which is a bit crazy for me. Happy New Year’s Eve! I hope everyone has had a happy holiday season so far. 2014 has been a different year for me. While weight loss didn’t really happen this year, one of my biggest priorities was getting comfortable with my day job. I can’t believe I’ve been at my new job for almost a year now. This year has really flown!

While this blog hasn’t been updated as often as I would like to, I’m so thankful for those of you who still visit and comment/email. Here’s the top 10 recipes that you all have loved this year. They aren’t necessarily from 2014, but they are favorites on here.

Reese's Peanut Butter Cup Cookies

10. Peanut Butter Cup Cookies – These cookies are just perfection. Reese’s cups baked in a huge peanut butter. Seriously awesome.

Banana Nutella "Ice Cream"

9. Banana Nutella “Ice Cream” – This is a great option if you’re craving ice cream, but don’t want the calories. You just throw frozen banana slices in a food processor or blender, and process until it’s the consistency of soft serve. I swirled in nutella for an extra treat.

Pulled Pork Tacos

8. Slow Cooker Pulled Pork Tacos – These are so simple to make and tasty. Pretty darn tasty, actually.

Corn Grits

7. Grilled Corn Grits – This is a copycat of Zea’s famous grilled corn grits. It called for cream, butter and more butter. These aren’t diet friendly in the least, but they are fantastic!

6. Holiday Spritz Cookies – This recipe makes a bunch of cookies, and they’re so fun to make. I made these without a cookie press (before I had one). They taste better with lots of fun sprinkles…not really, but they certainly are more fun!

Taco Cupcakes

5. Taco “Cupcakes” – This is such a great recipe to make ahead and freeze. It makes quite a few of them, but you could pop a few in the oven for an easy lunch or dinner anytime. I love these!

Whipped Pudding Frosting

4. Whipped Chocolate Pudding Frosting – This recipe is for the butter lovers. It’s the consistency of the whipped frosting you find in the grocery store bakeries, but it does tend to lean towards a more buttery flavor than classic buttercream. It reminds me a little of swiss meringue buttercream…delicious!

Homemade Strawberry Lemonade

3. Homemade Strawberry Lemonade – I plan on making a large pitcher of this once strawberry season happens in a few months. I love this drink, and um…a little bit of booze never hurt this drink either.

20 Minute Beef Stew

2. 20 Minute Pressure Cooker Beef Stew – With only 20 minutes of cooking time (not including time to reach pressure or time to release pressure), this dinner is quick, but it tastes like it’s been in the oven all day.

Spinach Strawberry Salad with Feta

1. Spinach, Strawberry, Pecan and Feta Salad with Strawberry Vinaigrette – This is y’all’s favorite (and mine). It’s inspired by a local restaurant, and the combination is just perfection. I wish strawberries were in season during the holidays, because it’s sort of festive, too.

Top 10 Recipes of 2012

Man, what a year it has been! I hope everyone had a wonderful holiday season with their friends and family. 🙂

Most years, I feel like time has flown by, but for some reason, it feels like last January was truly a year ago. So many great things have happened to us this year (as well as some really crappy events).  

Some highlights and not so highlights:

  • It was our first full year in our new house, which has been such a blessing. It’s just awesome to finally have friendly neighbors, who don’t throw their trash in our backyard or play loud music at 2am (side-eye to the neighbors at the old house).
  • My husband and I have both decided to live healthier. Between us, we’ve lost over 150 lbs. this year. (I’m sure my husband is rolling his eyes at me sharing this, but seriously..I’m gonna brag here!) That’s just amazing to me. I’m so proud of us.
  • Another weight loss highlight. I fit into a clothes size that I haven’t been able to wear since 10th grade. That was 12 years ago. OMG!
  • A not so highlight. Hurricane Isaac…don’t want to go into too much detail with that one, but yeah, hurricanes suck. Oh, and for the record, labradors don’t care if the winds are 50 mph outside. If there’s rain/water, it’s playtime! (ugh)
  • I think I’m making some good progress on my 101 Goals in 1001 Days list.

And of course, it’s been another fun year blogging. I really appreciate all of y’all taking the time to read my tiny corner of the Internet. Thank you for your sweet comments, emails and tweets. In January, it’s gonna be this blog’s 5th anniversary, and I’m just amazed by all of the friends I’ve made and people I’ve “met”  through this blog. You guys are the best!

Pumpkin Whoopie Pies w/ Salted Caramel Buttercream

10. Pumpkin Whoopie Pies with Salted Caramel Buttercream – These whoopie pies were made for a work fundraiser, and they were a huge success. Great pumpkin/spicy flavor, and the salted caramel buttercream just makes them super indulgent. Pumpkin + caramel is a wonderful combination!

Red Velvet Bundt Cake

9. Red Velvet Bundt Cake with Cream Cheese Frosting – I love anything red velvet. This bundt cake is a fun change from a regular cake, and it was pretty easy to throw together and bake!

Baked Oatmeal

8. Baked Oatmeal – My breakfast has been forever changed by this. This oatmeal is not soggy at all (which I hate about cooked oats), and it’s very sweet with the addition of bananas.

Peanut Butter Cookies

7. Peanut Butter Cookies – Just simple, classic peanut butter cookies. 🙂 Very good!

Candy Corn Oreo Truffles

6. Candy Corn Oreo Truffles – Oreo truffles are insanely good, and it was fun to make these with seasonal flavors. Always a favorite when I bring these truffles to work!

Fresh Strawberry Pie

5. Fresh Strawberry Pie – I’m SO glad strawberry season is back. I need to make this pie again…it’s not rich at all, and since it involves no cooking (except for the crust), it tastes so fresh!

Snickers Cupcakes

4. Snickers Cupcakes – Oh, I totally need to make these again. If you love Snickers, you will LOVE these!

2. Red Velvet Swirl Brownies – These were just delicious, and so pretty too! Perfect for Valentine’s Day!

1. Spinach, Strawberry, Pecan and Feta Salad with Strawberry Vinaigrette – This is a huge favorite of y’alls. I think Pinterest made this a popular one, and it is VERY easy to throw together! This is a salad you want to make for your next party…it’s an awesome combination!

Foodbuzz 24×24: The Best Things We Ever Ate

Summer officially started last Monday. However, being in Louisiana, we’ve been feeling summer-like weather since May. With the heat index hitting 110 degrees sometimes, we wanted to throw a summer party that was most definitely indoors!

I watch entirely too much Food Network. If it wasn’t for Food Network and reading food blogs, I’m fairly certain my husband and I would be living off of Hamburger Helper and take-out. One of my favorite shows lately has been The Best Thing I Ever Ate. Every show has a theme, and it features the cooks/hosts on Food Network and their favorite eats in that theme. So, when Foodbuzz emailed about this month’s 24×24 proposals, I figured it would be a fun party to feature the best things our families have eaten! Thanks so much to Foodbuzz for sponsoring this party! 🙂

To come up with the menu, I sent out an email to our families asking for their favorites in each category.

  • On the Grill (recipes that are done on the BBQ)
  • Dangerously Cheesy (major cheese in a dish)
  • No Utensils (finger foods/apps)
  • Keep it Comfy (comfort food)
  • Frozen Treats (any dessert from the freezer)
  • Mix it Up (a food that requires using a mixer—doesn’t have to be a sweet)
  • Louisiana’s Best (Louisiana food)
  • Cold and Colorful (like a salad or cold app with lots of veggies or fruit)
  • Under the Sea (favorite seafood dish)
  • Classic American (with 4th of July approaching, tell me a dish that screams American)

After getting many responses, here is the menu we came up with:

Cheese Fondue with Vegetables/Bread*

Boudin Balls

Entrees:
Steak Skewers with Chimichurri, Onion Cheese Sauce and Compound Butter*
Spicy BBQ Shrimp Skewers*

Crawfish Fettuccine
Macaroni and Cheese
Vegetable Skewers*
Grilled Corn
Lettuce Greens with Honey Lime Vinaigrette

Desserts:
Strawberry Cake*
Assorted Cupcakes
Cinnamon Crumb Apple Pie
Fresh Berries with Ice Cream

I will admit, I’m still getting the hang of entertaining for a large number of people. Despite doing a lot of prep, I felt fairly stressed in the last hour. Since the party was for family, though, I had loads of help at the last minute. 🙂 Whew!

The fondue was an absolute hit. I was nervous to make this myself, but this recipe came together beautifully! I served the fondue with day old po’boy bread, carrots and broccoli.

We purchased the boudin balls at a local joint, since they are pretty much my husband’s favorite. The bruschetta was a lighter alternative to the other appetizers. I was super excited to use basil from our garden for this dish!

I need to thank the hubs for braving the sweltering disgusting heat to cook up this magic on the grill. The steak, especially was a real winner to family!

We made 3 sauces available for people to dip/cover their skewers in: a chimichurri, onion blue cheese (not pictured) and a worchestershire chive butter. The chimichurri ended up being a huge hit (and I used parsley from the garden for it)!

Here is a semi-decent picture of the crawfish fettuccine before everyone digged in. The hubs’ parents made this dish and it was delicious. Perfect flavor with a little Louisiana kick!

This is some macaroni and cheese that is my mother-in-law’s favorite. It was definitely pretty tasty (not to mention, cheesy). 🙂

After enjoying some serious eats, we waited a good while before putting out desserts and just chatted, watched TV and played some games.

I will say the desserts were absolutely amazing.

Strawberry Cake (inspired by a local bakery). I would have just purchased one, but I had no idea an 8″ cake was over $30. What the heck?! I guess I’m just used to baking my own cakes to realize how expensive cakes have gotten!

This was a welcomed surprise. A local cupcake bakery occasionally has giveaways on Twitter, and I won some cupcakes! They were seriously delish! Thank you Sweet Wishes Cafe!

Here is the cinnamon crumb apple pie. This is one of those frozen pies you can find in the grocery store, but has quickly become a favorite with my hubs’ family.

Of course, our puppy was very excited to get all of the attention she got at the party, and thanks to my mom, she tried a piece of steak for the first time. I think she enjoyed it. 🙂

Easy Smoothie Shooters

One of my favorite things about warmer weather is the ability to get fresh, local fruits this time of the year – I find that local produce is much more flavorful AND it’s a little easier on the wallet as well! I tend to make a good bit of smoothies this time of the year, because I can easily replenish my freezer supply. I wanted to share my super simple smoothie recipe with y’all today – it’s easy to remember and you can use whatever fruits you prefer! My favorite combinations are strawberry/banana, blueberry/banana and pineapple/mango!

Easy Smoothie Shooters

Ingredients:

  • 1 cup milk (any type you prefer)
  • 4 oz. vanilla greek yogurt
  • 1 tbsp. honey
  • 1 – 1 1/2 cups frozen fruit (any fruit combination you prefer)

Directions:

  1. Place all ingredients in the blender (the frozen fruit measurements vary based on how thick you would like your smoothie to be). Blend all ingredients together until well-blended. Serve these in small glasses (shot glasses or fun martini glasses) – Enjoy!
