Hi y’all! I’m Amy, and this is my blog.
My life in the kitchen has been pretty eventful. I grew up watching my mother cook for a hungry family of 6, and looking back, I’m amazed at how she could just throw together these fantastic meals every night. Well, except for that one time she made liver. ::shudder:: (love you, Mom!)
When I moved out and went to college, my kitchen experiences changed. Sure, we’d all congregate to the kitchen, but this time, we’d spend hours making hundreds of jello shots while nuking Chef Boyardee. Priorities, people. We had them.
After graduating and then getting engaged to my husband, I knew that my days of blue box macaroni and cheese were numbered. Boiled hot dogs weren’t going to cut it either. The words sauté/braising/chiffonade just blew my mind. I decided it was time to learn how to cook from my Mom, and also immerse myself into cookbooks and lots of cooking shows. Since I had been blogging for a few years, it felt only natural to write about my adventures in the kitchen, so my first food blog, “Skinny Food by Amy,” was born.
Want a story about how much I didn’t know? I’ll never forget when my Mom caught me in the kitchen cooking chicken breasts in water, because I remember watching Mom add water to the pan while she was cooking meat. Well, let’s just say I now know the difference between deglazing the pan and straight up boiling chicken.

Before I knew it, I was a married gal. I really enjoyed cooking and baking up a storm for my husband and me, and I started to realize that the title of my blog just didn’t fit well. I live in Louisiana….all of my food can’t be “skinny”, right? So, I moved my blog and renamed it “The Nifty Foodie”. I hope you don’t mind. If you’re still looking for “skinny” recipes, they’re still around. I have a whole category for them.
I like to think of this blog as a place where I mainly share the recipes that my husband and I enjoy. Sometimes, I do share recipes that my husband can’t stand, though (like anything involving chocolate…and yes, I agree…poor guy is missing out). Too bad he married a chocolate loving gal.
