I used to be an avocado hater. There…I said it. When I was a kid, I thought they had a weird texture and tasted kind of bland. It took me until college to give these a try again, and it was in the form of guacamole. Avocado quickly became one of those foods that I learned to love as an adult. If something has sliced avocado or guacamole in it, chances are I’m gonna go for it.
As easy as it is to throw together some guacamole, I have to admit that I was stoked to find out about Wholly Guacamole’s products. I first discovered Wholly Guacamole products on a whim at the grocery store. When I started calorie counting, I basically walked all of the aisles of the grocery store to find snack ideas, and I came upon their 100 calorie guacamole packs. While I could definitely eat a whole batch of guacamole, I loved the idea of having it pre-portioned in a small amount. It’s the perfect dip for baked tortilla chips and veggies!
I reached out to the folks at Wholly Guacamole when they were tweeting about Grilling with Guacamole. I was intrigued, because I just recently tried my first burger with guacamole (OMG…it’s so good!). They sent me a whole ice chest of their products, and asked me to try out some guacamole with one of their grilling recipes. I was surprised to see that they have quite a few recipes out there to combine summer grilling with their guacamole products, and I decided to try this one for Wholly Stuffed Jalapenos. I’m a big fan of stuffed peppers, so when I saw the idea to add guacamole to the cream cheese, I was totally for it. These stuffed peppers came together quickly, and the guacamole added a great flavor to the peppers. I think it would be a great addition to a grilling party, because of how quickly these cook up on the grill and how easy they are to prep!

Wholly Stuffed Jalapenos
Source: Wholly GuacamoleIngredients:
- 12 jalapeno peppers
- 8 oz. cream cheese, softened
- 1 7 oz. package of Wholly Guacamole® dip
- 24 slices of bacon (I used turkey bacon.)
Directions:
- Preheat the oven to 425 degrees, and line a baking sheet with aluminum foil, and place a metal (oven-safe) cooling rack in the sheet as well. Set aside.
- Slice the jalapenos in half, lengthwise, and with a spoon, scoop out the seeds and the membrane. In a medium sized bowl, mix the cream cheese and guacamole dip together, until well-blended.
- Scoop the mixture into each jalapeno half, and then wrap a slice of bacon completely around each stuffed jalapeno half.
- Place the stuffed jalapenos on top of the cooling rack with the baking sheet underneath to catch anything that could drip out. Bake in the oven for 20 minutes. Turn over the jalapenos, using tongs, and cook for another 20 minutes, until the bacon is fully cooked, starting to brown, and appears crispy. To make them on the grill, you can grill them over indirect heat for 8-10 minutes, until the bacon is fully cooked, starting to brown and appears crispy.
