Best Fudge Ever!

I’m sorry. I really am. Most of us are making resolutions to be healthier (myself included), and here I am posting a recipe that includes 5 cups of sugar. Please don’t hate me.

I will say, though, this is a recipe I need to share with y’all. This is the fudge that my Mom makes every holiday season. My Memaw makes a very similar version as well, except she swears by marshmallow cream instead of marshmallows.

I finally got the guts to give this recipe a whirl the week of Christmas, and I’m happy to say that I didn’t completely mess it up! I ended up slightly overcooking mine though, so it wasn’t quite as creamy as Mom makes it. I’m still working on getting better with candy making. 🙂

Mom’s Fudge

Ingredients:

  • 5 cups sugar
  • 1/3 cup cocoa powder
  • 1 12 oz. can evaporated milk
  • 1 cup whole milk
  • 1 cup creamy peanut butter
  • 2 cups mini marshmallows
  • 1 tbsp. butter

Directions:

  1. Mix cocoa and sugar in a dutch oven. Add both milks and mix.
  2. Bring the mixture to a boil (to where the mixture almost bubbles over).
  3. Lower the heat and stir the mixture.
  4. Keep cooking and stirring occasionally until the mixture reaches soft ball stage or 235 degrees. (This video is EXCELLENT in helping you to figure out what soft ball stage is.)
  5. Remove the mixture from the heat and working quickly, stir in the butter, peanut butter and marshmallows.
  6. Pour the batter in a parchment paper lined 9×13 inch pan. Allow it to cool for 2-3 hours. Cut and enjoy!

What a year! I can’t believe that 2010 is almost over, but I have to say, it’s been a pretty great year! This year, I moved my food blog (and changed the name), made some amazing food blogger friends and tried some great recipes. I’m so excited to see what 2011 will bring. 🙂

A lot of food bloggers are doing their top 10 of 2010, and I personally love the idea. It’s great to look back on the year, and I know I’m starring a lot of posts for recipe ideas from posts like this. 🙂 So, here’s the top 10 based on popularity of posts!

10. Iced Coffee – This recipe will make you wonder why you ever spent $4 on an iced coffee. This is delicious and very refreshing!

Eggnog Macarons

Macarons

The macaron. These are probably one of the most intimidating cookies out there. I’ve made them before, but it was in the summer, and humidity was raging. I guess the extra moisture in the air attributed to my macarons ending up with no feet. They tasted wonderful, but they were pitiful flat little cookies. 🙁

I sort of forgot about these little treats until my sisters and I visited Sucre in New Orleans. It was love at first bite. Pistachio was my absolute favorite out of all the flavors we tried.

That evening, I was asked to bring all desserts for Christmas. I knew that I had to give these macarons another attempt. I mean, dew point was in the 30s and that’s SUPER rare in Louisiana. So, bye bye to the humidity for this attempt!

That first picture….yep, those were the macarons that I made! I was yelling in excitement to the hubs as I stared into the oven, watching those little feet happen. I totally had my first macaron success!! Best of all? My family thought they tasted just like the ones from Sucre! Win! 🙂

This was also my first time making some form of a meringue buttercream. Seriously y’all, I thought this was a massive fail, but I remember reading on blogs that it does take a while to come together. After several minutes, just like that, it went from a separated mixture to a gorgeous frosting! I’m in shock that a frosting with so little sugar tastes so much better, too! Definitely making a meringue-type frosting again soon! I ended up filling a few with plain buttercream to see how it would taste (as you can see in the bottom row), but after tasting both, I felt that the spiced eggnog frosting was the way to go here.

For the macarons:

Ingredients:

  • 90 gr egg whites (use eggs whites that have been preferably left 3-5 days in the fridge)
  • 25 gr granulated sugar
  • 200 gr powdered sugar
  • 110 gr almonds (slivered, blanched, sliced, whatever you like)

Directions:

  1. In a stand mixer fitted with the whisk attachment, whip the egg whites to a foam, (think bubble bath foam) gradually add the sugar until you obtain a glossy meringue (think shaving cream). Do not overbeat your meringue or it will be too dry.
  2. Place the powdered sugar and almonds in a food processor and give them a good pulse until the nuts are finely ground.
  3. Add them to the meringue, give it a quick fold to break some of the air and then fold the mass carefully until you obtain a batter that falls back on itself after counting to 10. Give quick strokes at first to break the mass and slow down. The whole process should not take more than 50 strokes. Test a small amount on a plate: if the tops flattens on its own you are good to go. If there is a small beak, give the batter a couple of turns.
  4. Fill a pastry bag fitted with a plain tip (Ateco #807 or #809) with the batter and pipe small rounds (1.5 inches in diameter) onto parchment paper or silicone mats lined baking sheets. Let the macarons sit out for 30 minutes to an hour to harden their shells a bit. In the meantime, preheat the oven to 280F.
  5. When ready, bake for 15 to 20 minutes, depending on their size. Let cool. If you have trouble removing the shells, pour a couple of drops of water under the parchment paper while the sheet is still a bit warm and the macarons will lift up more easily do to the moisture. Don’t let them sit there in it too long or they will become soggy.
  6. Once baked and if you are not using them right away, store them in an airtight container out of the fridge for a couple of days or in the freezer.

For the eggnog filling:

Ingredients:

  • 1/2 cup (100gr) sugar
  • 2 large egg whites
  • 1 1/2 sticks (180gr)(6 ounces) unsalted butter, at room temperature
  • 1/4 teaspoon to 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg

Directions:

  1. Put the sugar and egg whites in a large heatproof bowl over a saucepan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 3 minutes. The sugar should be dissolved, and the mixture will look like marshmallow cream.
  2. Pour the mixture into the bowl of a stand mixer fitted with the whisk attachment and beat the meringue on medium speed until it cools and forms a thick shiny meringue, about 5 minutes.
  3. Switch to the paddle attachment and add the butter, one tablespoon at a time, beating until smooth. Once all the butter is in, beat in the buttercream on medium-high speed until it is thick and very smooth, 6-10 minutes.
  4. Add the cinnamon and nutmeg to the buttercream.. Fill he shells with the buttercream and enjoy!

Our Millie

I was checking my Google Reader today, trying to catch up after the holiday season, and saw that Jenny of Geek in Heels wrote a post about her dog, Comang, for a contest sponsored by Trupanion Pet Insurance called “Pawliday Blog Contest“. Y’all know I love writing about Millie, so I thought it would be fun to enter! The topic is “How My Pet’s Love is My Holiday Gift”, which is a wonderful subject since this was our first holiday season with Millie.

Millie actually was a holiday gift. My grandmother gifted the hubs and I with a check last Christmas,  and that check went towards Millie’s adoption costs, as well as a donation to help our local shelter. 🙂

I remember when we saw Millie’s picture on Facebook. The shelter has a non-profit to help adopt out the dogs (called Yelp! Baton Rouge) and that’s where all of the adoptable pets’ pictures were posted. The hubs and I instantly fell in love with Millie’s cute playful picture, so we inquired about her before the adoption day.

I remember rushing to put away the Christmas decorations one afternoon before we brought her home, because we wanted the house as puppy proof as possible. Little did we know what we were in for.

That very first night, she woke us up every hour. She seemed so sad and scared of her life without her siblings. After cleaning up multiple accidents in our house and dealing with puppy pads for the first week, the hubs and I were exhausted. It was very trying for us, because it was just the hubs and I before this. We weren’t sure how we were going to do this at all! However, we were definitely falling head over heels in love with this little fur ball.

Slowly, but surely, things started to get better for us. I remember thinking the first month with Millie was the longest month ever, because our lives were so different with this new puppy in our lives. After that first month, though, Millie’s care became much less daunting (no more accidents!) and this new little puppy in our lives was easily a part of our daily routine now!

Now that we’ve almost had her in our lives for a year now, it’s wonderful to look back on how positively our lives have changed because of her. 🙂

Millie is very sweet. Whenever we get home, she’s so SO happy to see us….EVERYTIME! Sometimes I wonder how that little tail of hers stays attached! It’s so wonderful to see how much she loves us. She always has to be around one of us, too. Whether it’s jumping on our bed to cuddle with the hubs or snuggling under my legs begging me to pet her, we just know that she loves us. Whenever one of us has a bad day, she just seems to know. Her cute little face will just make us forget the day we’ve had, even if only for a minute. 🙂

While the holiday season surely is a hectic one, it was so great to see that she was pretty much the same ol’ loving dog. During the panic of last minute baking and gifting, she still would snuggle with my feet and lick my ankles. The holidays never affected her, and I loved it, because it made me realize that the holiday season should truly be happier than I was making it out to be!

Two days ago, when Christmas Day came, I dumped out her stocking. Her reaction to $15 worth of chew toys and treats was just so awesomely cute. It’s still like Christmas Day when I give her a surprise from her stocking! Even right now, she is laying against my feet, as usual, chewing on a rope toy and every few minutes, she looks up and licks me (a little loving reminder, no?).

I can’t help but think of Millie’s love as the ultimate gift to us. She’s has such a simple, beautiful little soul and reminds me everyday that there is more to life than the stresses of the everyday. 🙂

A bunch of randoms..

  • Yesterday, I learned (from y’all and ironically, the John Tesh show during the drive home from work) that the X in “x-mas” is actually OK to use. I still don’t really like it, and I’m sure that 80% of my friends on Facebook who use it on a regular basis don’t really know the history of the use of X for Christ. So, I still really no likey “x-mas”. However, thanks to you guys for (politely) educating me on the subject. 🙂

 

  • That tree skirt that I was planning still hasn’t happened. I blame my cute dog for being extra cuddly lately. No progress has been made, but I do want to finish it for next year.

 

  • I am learning how to crochet slowly, but surely. I can make a chain like it’s nobody’s business, and I’m trying to work on the single crochet. How is it that I can catch onto knitting super quickly, but this crochet thing just blows my mind? Of course, this motivates me more to show those crochet hooks that I can make this work. 🙂

 

  • Christmas is in 3 days…what?! I still have cheesecake, sugar cookies, macarons (hopefully), oreo truffles and biscotti to make. Eep…not to mention, a few more sewing projects for gifts. :

 

  • I just looked at my 101 in 1001 list. I doubt that it will all be done by May 2011 (dang 1001 days flew by!), but I have my mind focused especially on goals 43-50. I know it won’t happen in 5 months, but I’d love to be well on track! I’d also like to work on making goal 75 happen. 🙂

 

  • Remember this desk? Yeah, it’s not done. After fighting a few times with trying to sand the little nooks and crannies down and watching the wood lose its shape in some of the detailing (I’m assuming this desk is a VERY soft wood, unfortunately), I decided that the staining just isn’t in the cards for this piece. 🙁 Since it’s for the craft room, after all, I decided it’s getting painted. Stay tuned for that.

A New Outlook on Christmas

I really can’t believe it’s almost Christmas. The tree is decorated, stockings are hung, (most of) the gifts are wrapped and food gift boxes are finished.

It’s sort of a routine now….a different routine than it was for me 15 years ago. I tend to miss being a kid during the Christmas season.

I remember when I was younger, my siblings and I would glance over every page in the Sears Toy book. We’d carefully write our lists in our best handwriting, give the lists to our parents, and they made sure that it got in the mail for Santa. Even after the lists were done, we still looked over the book, dreaming about what toy might be ours on Christmas. It was such a happy time, full of anticipation and excitement.

When the holidays were approaching, school was out. I remember lounging around, watching cartoons, adding sprinkles to freshly baked cookies and drooling over the smell of fudge and pralines cooking on the stove.

On Christmas Eve, my sister and I would talk non-stop about the next day. We shared a room, so this led to a fairly sleepless night. We’d wake up at the crack of dawn, tip-toe downstairs, wake up our brother and sister and watch Christmas cartoons, waiting for Mom and Dad to come out with the video camera. It was a rule that presents could NOT be opened until Dad got the camera. 🙂

Once Dad would get the camera, I remember ripping open our toys from Santa, amped up on Hershey’s Kisses and Mom’s Mickey Mouse pancakes. We’d all scream, “OMG THANK YOU SANTA!” (I’m pretty sure Christmas Day with kids is the reason Advil stays in business..haha!) This happened again at my aunt’s house, where we all met up for Christmas. By the end of the day, we’d come home with way too many presents and a sinking feeling of “it’s over…no more Christmas”. :-

As an adult, things are a little different. I mean, of course, I look forward to the gift giving and receiving mumbo jumbo, but, as an adult, I will say, that I now understand that consumerism does not hold the true value of Christmas. As a Christian, I know that we are rejoicing Christ’s birth and HE is the reason for the season. To this day, I cringe when I see “X-mas”. I think most people don’t think the way I think, but I think it’s such a disregard for the reason of Christmas. Not to get all religious on y’all, but seriously, Christmas is a celebration for CHRIST…why “X” Him out?! Lame…

I like to look at Christmas with a different perspective now. It’s not the gifts that get me excited about Christmas (and I’m being completely serious…completely..). It’s really about seeing family and friends. Christmas just SCREAMS gathering to me, and I love that I get to see so much family at once. It’s wonderful to catch up and reflect on the past year with them. 🙂 While I can say, I completely miss that level of anticipation over Santa’s surprises, I have to say, I can appreciate this new outlook on the holiday season that I have as an adult. Not only does it make me feel a little bit more fulfilled, but even after Christmas is over, it’s not a sinking low feeling that I had as a child anymore.

No Place Like Home for the Holidays

Decorating for Christmas is one of my favorite things. If I’m not in the holiday spirit before then, I’m definitely full of spirit right afterwards! Over the past 3 Christmases, we’ve slowly added to our decor.

The new additions to our mantle is Millie’s stocking and holder, the knit Christmas tree and the fabric bowl full of leftover ornaments that I purchased to make our wreath last year. I love it!

Since we don’t have much space for a Christmas tree, we definitely LOVE our skinny tree. The hubs bought this at Kohls on major sale. The majority of the ornaments are from Sam’s Club. They sell mega packs of ornaments in different color themes, and I fell in love with the brown/bronze pack, since it’s neutral.

And, as you may know, this is Millie’s first Christmas with us. I was pretty worried about how her curious little self would react, but she ignores it, for the most part. 🙂 I think she has some Christmas spirit too (gotta love puppy smiles).

Warm Bacon Vinaigrette

Warm Bacon Vinaigrette

A few weeks ago, Justin of Marx Foods asked for bloggers who would be interested in developing a recipe using Mangalitsa pork products. (The winner would move onto another challenge issued by Marx Foods!) I’ve never heard of this before, but I was intrigued, so of course, I sent an email. Before I knew it, I had a slab of Mangalitsa bacon in front of me, begging to be made into something.

I asked my Twitter friends what they would prefer: sweet or savory. It was close, but savory had the most requests. 🙂

So, I brainstormed. I didn’t want to do a breakfast item, since that’s what bacon is known to be used in. I wanted to do something a tad different, and I remember having a spinach salad with bacon vinaigrette at a restaurant a while back. It was absolutely delicious, so I thought this would be a good thing to try to replicate in the kitchen.

I’m not the best cook in the world when I wing it, but for some reason, this dressing came out really awesome on the first try! The bacon lends a very mild flavor, but is still prominent in the dressing. I really enjoyed it!

Warm Bacon Vinaigrette

Ingredients:

  • 1 slice thick cut bacon (I used mangalitsa bacon), cut into small cubes
  • 1 small shallot, finely diced
  • 1 clove garlic, finely diced
  • 1 tsp. honey
  • 1 tsp. dijon mustard
  • 4 tbsp. red wine vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Directions:

  1. Cook the bacon on medium heat until done. Set the bacon to the side and pour off all but appx. 1 tbsp. bacon fat.
  2. Cook the shallot and garlic in the same pan (with the 1 tbsp. bacon fat) for about 5 minutes on medium low heat until it’s cooked down.
  3. Turn heat to low. Add in red wine vinegar, honey, dijon mustard and whisk well.
  4. Whisk in the olive oil, a little at a time until well blended.
  5. Serve over a salad of greens or spinach and enjoy!

The month of November…

It’s been a pretty crazy month on this blog. After deciding to do NaBloPoMo, I realized that I needed to really dig for some topics. I’m not that interesting, but I didn’t want to just write 30 posts with one picture and a sentence in there. Although I did end up doing just that on November 9th,  November 25th and November 28th. I’m just glad that 27 out of the 30 days had (what I consider) real content.

The funny thing is, I still have a list of topics I want to blog about. This month made me realize that the reason for my lack of blogging hasn’t been lack of topics, it’s been laziness. This month forced me to take out my camera more, scribble topics in my planner and of course, share more with the 5 (or maybe 6) readers that I do have. 🙂

Thank you, November.

This month forced me to be a little more productive. I can’t blog about sitting on the couch and watching TV with the dog. (Although, she is a cutie!) I had to get up, be productive and share it with y’all. I was afraid y’all would find me boring. (You might still find me boring, but at least I tried!)

I hope you didn’t find my blog to be too boring this month. In case you’re new to the blog and don’t feel like reading through 30 posts, I’m going to try to sum it up for you with some of my favorite posts from this month.

Chewy Sugar Cookies

Soft and Chewy Sugar Cookies

I’m so excited that I can pull out the Christmas tree, blast my Christmas Pandora station and start the holiday baking (without getting judgey stares from others)! It’s officially CHRISTMAS SEASON!

I pretty much sang Christmas carols the whole time while making these. My sous chef, aka my four legged friend who just lays on the cold kitchen floor as I work, probably was not very pleased. I will say that the sous chef really couldn’t care less about the Christmas tree so far…whew! 🙂

Back to the cookies. The hubs LOVES a good chewy sugar cookie, so when I saw this recipe on Christen’s blog, I couldn’t wait to make these happen! The ingredients sound a little weird at first (cream cheese in sugar cookies?!), but trust me, it works. The hubs said these were probably the best cookies I’ve ever made! SCORE!

Chewy Sugar Cookies

Ingredients:

  •  2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups sugar, plus extra for rolling the cookies in
  • 3 oz cream cheese, cut into small pieces
  • 6 tbsp butter, melted and warm
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tbsp milk
  • 2 tsp vanilla extract

Directions:

  1. Preheat oven to 350.
  2. Line a baking sheet with silicone mat.  Whisk flour, baking soda, baking powder and salt together in a medium-sized bowl.
  3. In a large bowl, place the 1.5 cups sugar and the cream cheese, then pour the warm butter over it and whisk to combine.  It will be slightly lumpy.  Whisk in oil, mix well then add the egg, milk and vanilla and whisk until smooth.  Add flour mixture and mix with a scraper spatula until dough forms.
  4. Using a medium cookie scoop, scoop cookies onto a baking pan, leaving adequate space for baking. Using the bottom of a drinking glass, gently flatten each cookie to make them uniform in size. Sprinkle additional sugar on top of each cookie (and sprinkles, if you’d like).  Bake 11-13 minutes, until edges are just set. (This step is much different from Cooks Illustrated, because I found the resulting dough to be too sticky to work with.) This made about 30 cookies.
  5. Cool on wire rack.
