Losing the Weight

February 19, 2013 by Amy 13 Comments

One of the most popular questions that I get asked lately is about how I’ve been losing the weight so far.

***I’m absolutely NO expert in weight loss whatsoever, but I figured I’d share with y’all what has been working for me.***

Here’s some before pictures from late 2011. Facebook doesn’t hide the ugly truth. I was quite obese then (still am now, actually), and I tried REALLY hard not to post pictures on Facebook, but these little gems somehow slipped through the cracks.

Losing the Weight

I cannot do restrictive diets. Diets that tell me exactly what I can and cannot eat just aren’t for me. I will fail at those diets, and I have come to peace with that. I knew the best way to do this would be a gradual way, so I started calorie counting on MyFitnessPal. The great thing about MyFitnessPal is that you can tell it your weekly weight loss goals (0.5 lbs-2 lbs/week), and it will give you your calorie goal based on that. In the beginning, I told it 1 lb/week, which put me at about 1800-1900 calories/day (this sounds high, but I weighed almost 300 lbs. in the beginning). It wasn’t too bad to reach that goal, and somehow (seriously, not sure how this happened) in the first month, I dropped 10 lbs. It was motivating, for sure!

The next month, I decided to drop down to losing 1.5 lbs/week, which made my calorie count around 1700/day. The 100 calorie drop to me just wasn’t a big deal…this seemed very gradual and doable to me. I still have MyFitnessPal set to losing 1.5 lbs/week presently, but now I’m about 1600 calories. The reason for this is every time you drop 10 lbs., MyFitnessPal prompts you to adjust the calories based on your new weight (it calculates this for you, but you have to OK it).

I love calorie counting. It may not work for everyone, but for me, it’s wonderful. I make mostly healthy choices on my own, but I know if I want pizza or chinese take-out for a meal, it’s totally fine. As long as I have the calories for it. I won’t lose control this way, and I don’t feel deprived at all.  Now, sometimes there are meals where I just don’t feel like entering everything. I used to have a splurge meal once/week, but now I’m at about every two weeks. I know some people will diet more strictly than I am, but for me, I’m trying to teach myself how to make this into a lifestyle change. I’m not going to say no to a dinner out with a friend at the tex-mex place with my favorite queso, because I only have 500 calories left for the day. I won’t go on an all-out binge either, but I will eat what I want in smaller portions. Small changes…even if I eat a little over my calories, I’ll accept the small gain and move on.

In the summer of last year, things started to slow down weight loss wise for me, so I decided to start running with the C25K program. I was exercising 3x/week with C25K, and the weight started dropping fairly consistently once I incorporated some form of an exercise program. Then, in January (of this year), my husband and I joined a gym near our house, which has allowed me to add strength training to my exercise program. I try to work out 4-5x/week, where I either do 30 minutes of cardio (usually running) or almost an hour of strength training. I will say that since adding strength training to the routine, my weight is dropping a lot faster than before. I’m seeing 2-3 lb drops/week when I was so used to 1-2 lbs/week.

About 13 months later, I’m feeling like a whole different person. I’m just about halfway done with my weight loss journey, though, so there’s still quite a bit of work ahead for me.

Losing the Weight

I would like to reiterate that I’m no weight loss expert. I just wanted to share with y’all what has been working for me, since quite a few of you are curious. 🙂

Overwhelming shopping difference..

February 18, 2013 by Amy 17 Comments

Last week, I got some coupons from JCPenney. $10 off $10 or more. (I thought they didn’t do coupons anymore, but I guess I haven’t clothes shopped in a while…) Anyway, I decided that this would be a good opportunity to get some clothes on the cheap. I’m having an itch to get some bright, spring-y clothes, so I was pretty excited to see what they had.

I wasn’t sure what to expect though. This was my first time looking through the misses section in years. I’m talking since the 1990s, y’all.

Here’s a small vent I have about plus size sections in stores. The misses section of a store could have a whole darn floor in a department store, but the plus size section is usually 20ish racks within that floor. Oh, and within that plus size section, about half of it is for a more mature customer. So, the choices were very limited. Also, being a larger size in the plus sizes meant just automatically go to the back of the rack, hoping they had a 3X available. This is why I always hated shopping. It was seriously boring and depressing.

This past weekend, my husband and I went to the mall, and I was really excited to shop. This really never happens, y’all. I get excited to shop for gifts, but for me? HA! After we went to a couple of stores, it was time to face the misses section. My husband grabbed the first XL tee off the shelf, and recommended that I just try it on to even see if it fit. Not only did it fit, but the blue color looked awesome on me. It was a simple V neck fitted tee, which was only $6. Um…seriously? Simple tees in plus sizes are almost twice as much!

So, not only am I dealing with more choices…I’m also getting cheaper clothes? Awesome.

On the way to the fitting room, I also grabbed this bright, spring-y casual blouse. I’m a big fan of aqua/teals, so this one just called to me. This one fit as well. 🙂 Gosh, I love the colors in this blouse SO much!

I wanted to grab one more top, and my husband saw this fitted polo type of shirt. I just grabbed the XL, and we were off to the register before I could cause more damage to my bank account LOL! We found these three tops in one small section of the misses department. As we were walking out of the store, I was just overwhelmed by all of the clothing choices and possibilities (as well as the prices….you mean a work top doesn’t have to cost $40??!). This is just crazy to me!

Here’s the new tops that I purchased. Don’t they just scream Spring?

Overwhelming

Another purchase I made this weekend were these (my before size jeans are below these for a size comparison)…

Overwhelming

Lane Bryant was having an additional 70% off clearance sale for one day (Friday). Since my work pants were getting droopy, I figured I’d try my luck. Not only did I find a pair of work pants (for just $12, too!), I also got some guts and purchased my first pair of skinny jeans. Not just any skinny jeans either….teal colored skinny jeans! I felt pretty gutsy with that purchase haha! 🙂 And can I mention how awesome it is to shop in the 14/16 side of the rack vs. the 24/26? Just AWESOME!

Another great bonus right now is that I’m now fitting my little sister’s (before) clothes. My younger sister, Rachel, has lost 40 lbs. WHILE ATTENDING COLLEGE…yeah…she’s awesome. I asked my sister if she ever gave away any of her clothes, and luckily, her closet at home was still pretty full. 🙂 So, I told her if there were any clothes she no longer fits in that she doesn’t want, I’d definitely appreciate them. While my sister is 8 years younger than me, she has a ton of professional type clothes, since she’s a music major and has recitals/auditions/etc. I seriously hit the jackpot with what her & Mom brought me this past week.

Overwhelming

It seriously doubled my wardrobe, and made me realize I probably need to do another clean-out of clothes that are too big on me. 😛

Oh, and this is what I wore to the mall on Saturday. 🙂 The cardigan is one of those hand me ups. I love it…a simple grey cardigan with white polka dots! 🙂 Thanks sis (and Mom, of course, since she probably purchased most of it.)!  Some of the clothes are a smidge too small (and some are really small, since they included some size L tops), but I’m sure once this DietBet is over in March, most of these pieces will be part of my daily wardrobe. So awesome…my wallet totally appreciates it! 🙂

Overwhelming

I’m so motivated right now! By the way, if you follow my Instagram, I’m sorry that I post a lot of weight loss related pictures. I’m worrying that it may be coming across as braggy. It’s more out of disbelief, I swear. I still can’t believe that this is all happening. 🙂

Melting Chocolate Cake (for two)

February 12, 2013 by Amy 4 Comments

Melting Chocolate Cake for Two

My husband and I went on a Carnival cruise this past December. It was our first cruise together (and individually), so we really weren’t sure what to expect. We decided to go the week before Christmas, which meant our holiday prep had to be done way in advance. I have to admit, it was really bizarre coming back to New Orleans two days before Christmas. It just didn’t feel like Christmas after spending a week snorkeling, eating island food, sampling lots of Jamaican rum & battling a mean sunburn (ha!). 🙂 We ended up having a wonderful time, and we’re actually planning our next one!

One of the things that I was looking forward to was the food. I read reviews that the meals in the dining room were like going to a fancy restaurant every night. Oh man….and those reviews were right. Every single dish we had we loved. In fact, I loved the food so much that I gained 5 pounds in a week (whoops!). The dish I looked forward to the most (based on reviews from friends and online) was the warm melting chocolate cake. After trying my first one, I was hooked. It was such a rich, decadent dessert, and usually I can’t finish desserts like this, but I couldn’t let any of the cake go to waste. They served them in small ramekins with a scoop of vanilla ice cream. The cake itself is baked along the edges, but in the middle is a warm, gooey center of chocolate. Amazing. It’s worth breaking a diet over…seriously.

When we got home, I immediately searched for this recipe. There were a couple of popular variations, but this one is apparently straight from the cruise line’s newsletter. I ended up halving it to make this a dessert for two. This recipe is so simple (you will need a food scale for this one)…the batter was done within minutes, and I only used two regular sized bowls to make the batter. It’s the perfect ending to a nice dinner (hint hint: Valentine’s Day or Anniversary). You could add fresh fruit, whipped cream or vanilla ice cream on top, which I would recommend since it’s so rich.

Melting Chocolate Cake for Two
Source: mildly adapted from Carnival Cruise Lines, found on Mommy Musings

Ingredients:

  • 3 oz. semi-sweet chocolate (chopped)
  • 3/4 stick butter
  • 2 eggs (at room temperature)
  • 3 oz. granulated sugar
  • 1 oz. all-purpose flour
  • 1/2 tsp. vanilla extract
  • confectioners sugar, for dusting

Directions:

  1. Preheat the oven to 390 degrees. Prepare two small ramekins (or cocottes) by spraying the inside with a baking spray. Place the two ramekins in a 9×13 inch baking pan, and fill the baking pan (not ramekins) with water until it is surrounding the ramekins halfway up the sides.
  2. In a bowl, microwave the chocolate and butter, stirring the mixture every 30 seconds, until the chocolate and butter are homogenous mixture. Allow the mixture to cool until it’s just warm.
  3. In another bowl, whisk the eggs and sugar together for about a minute, until well mixed. Add in the flour and vanilla extract and mix together.
  4. Once the chocolate/butter mixture is no longer hot, pour the egg mixture into the chocolate mixture, whisking well as you pour it in.
  5. Once everything is mixed, divide the batter into the two ramekins. Bake for 15-25 minutes (it varies this much based on the size of your ramekins/cocottes…mine took 21 minutes), until the top of the cake is crusted, the edges are baked/firm, yet the middle of the cake is still gooey.
  6. To serve, sift confectioners sugar over the cakes and enjoy warm!

One Bowl Brownies

February 8, 2013 by Amy Leave a Comment

onebowlbrownies

Ok ladies. You know how you have a craving and no matter how many times you try to shake it, you just can’t until you actually eat what you’re craving? Yeah, that was me this WHOLE week.

It was a burrito salad at this place called Izzo’s. I’ve been thinking about it all week, and while the salad that I enjoy is well within my calorie count for the day, for some reason the food there makes me bloat like crazy. Oh, TMI…whatever. You ladies who are reading this get it.

And with my latest DietBet ending today, I was able to go to that restaurant today (right after the gym, mind you) and I savored every last bite of that darn salad. I will never have the mentality of “eat to live”…but at least it wasn’t an order of nachos or something, right? I could have done worse…way worse. 😛

After Christmas, I had a similar craving for brownies. I just couldn’t shake it, and one night, I figured if the recipe was easy enough, the darn brownies were meant to be. And then I came upon this recipe. One bowl brownies.

Meant to be, I guess. 🙂 I only had one out of the pan (coworkers had the rest), and oh man, these brownies were so rich and fudgy. I was pleasantly surprised since the recipe was so simple! I ended up throwing some leftover Christmas Hershey kisses in there as well, just to get rid of the candy. The brownies are a great, basic recipe…they would probably be amazing with peanut butter or caramel sauce mixed in as well.

One Bowl Brownies
Source: Kraft

Ingredients:

  • 4 oz. Baker’s unsweetened chocolate
  • 3/4 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 cup all purpose flour

Directions:

  1. Preheat the oven to 350 degrees. Prepare a 13×9 inch cake pan by lining it with foil and spraying the inside with cooking spray.
  2. Microwave the chocolate and butter in a large bowl for two minutes, or until the butter is melted. Stir the mixture until the chocolate is completely melted, and stir in the sugar. Wait for the mixture to be cool to the touch, and whisk in the eggs and vanilla extract. Add in the flour and mix well. Pour the batter into the prepared pan.
  3. Bake the brownies for 30-35 minutes, or until a toothpick inserted in the center comes out with a few fudgy crumbs (making sure not to overbake). Allow the brownies to fully cool in the pan before serving.

A bunch of randoms

Randoms

  • HAPPY DAY! My DietBet officially ended yesterday, and while the goal was to lose 10 lbs., I’m so happy to say that I lost 13 lbs.! The only thing I changed since the new year was joining a gym (finally) and adding strength training to my workout routine. Crazy how the pounds are just melting away. I’m addicted! I will be doing another DietBet that starts next Monday…at this rate, I could hit “Onederland” by this summer. How AMAZING would that be?!

Influenster

  • I received a package from Influenster a couple of weeks ago that contained dish soap. Specifically, Palmolive Fresh Infusions. You know you’re officially old when you get excited about fancy smelling dish soap, y’all….but seriously, the Lime Basil scent (on the left) smells SO fresh and light. I’m in love…I even wash my hands with it instead of my Bath and Body Works stuff. It also works really well, so now I think I’m spoiled as far as dish soap is concerned.

  • I’ve been staring at size charts for a while now, and realized I’m 6 inches (in my waist, that is) away from fitting in my favorite regular sized clothing store (I can’t say favorite by the fit, but I can say favorite by the looks of the clothes and the fact there’s an outlet for them not very far from my house).

Randoms

  •  The last time I was in the New Orleans area, I had to stop here. My favorite king cake place ever, and if you find yourself in New Orleans during king cake season, find one of these cakes. Wait in the line, no matter how long it is (it moves fast). You won’t regret it. I sliced it up in small pieces and froze them immediately so they can be a small splurge for me every now and then. So worth it!

Randoms

  • I can’t believe it’s time for this, again. I started jalapenos, bell peppers, cherry tomatoes and a ton of basil for the next growing season. Cannot.wait.

Randoms

  • And a random picture. I refuse to buy new sweaters this season, so I’ve been wearing mine from last winter. It’s a bit ridiculous that these were tight on me last year. They look entirely too loose on me, but it’s a bit of a self esteem booster to see progress every time I look in the mirror. 🙂

20% (60 lbs.)

February 4, 2013 by Amy 13 Comments

It’s been three months since I posted about a weight loss milestone. I have to admit, these past 10 lbs. were hard to lose. I was chugging along with my calorie counting, and then Thanksgiving hit. Then, my husband and I went on a cruise (with unlimited fabulous food). And THEN, there was Christmas. While the fudge, cookies & comfort food were worth it, I had to get right back on track! I’m so thrilled to see results again!

The weird thing about losing weight is I always feel like I look like my “before”. I can still stand in front of a mirror, and I still have those fat feelings. I feel like eh, 60 lbs. isn’t THAT much. I still look fat. And really, I’m just about halfway done with my weight loss journey. I know I still have a long way to go.

I know I shouldn’t feel that way, but you are your worst critic, right?

So, on Saturday, I decided to try a regular clothing store for the first time since…um…high school. My measurements were getting close to a size 20 on the chart at Old Navy, so I thought…why not try? I pulled up the jeans, buttoned them, said a little prayer as I pulled the zipper and….THEY FIT! Holy cow! My first regular size jeans in a LONG time!

My progress pictures are a little bit different this time around since I was SO stoked in these pictures (taken in the fitting room at Old Navy), and really felt I should share them. When I made the progress collage this morning, I totally freaked out a little bit. Like I said, I usually still feel like my “before” self, but after looking at these pictures, I truly see progress!

20% (60 lbs. down) collage

Some NSVs (non-scale victories):

  • I’m able to grab my feet when I stretch after a workout. I totally Instagrammed that picture too…my belly always got in the way during my stretches…until now. 🙂
  • I fit in size 18 pants (womens) and size 20 pants (misses).
  • Ok, this is a scale victory. I weigh less than I did on my wedding day!
  • My coworkers are constantly pointing out my droopy pants. 🙂 I don’t mind at all (It actually makes my day!), but I did buy some new work pants and jeans this weekend (I purchase new pants every other size, and only if they’re on clearance…like less than $20/pair).

I still can’t believe how far I’ve come. I mean….my next mini-goal is 75 lbs. I’m 15 lbs. away from that. CRAZY!

Health/Fitness Goals for 2013

February 1, 2013 by Amy 2 Comments

Sometimes I look at myself in the mirror, and I have to stare for a second. My body is changing every day, and it blows my mind how much has happened over the past year.

2012 Weight Loss

Last year at this time, life was completely different. Walking fast made me breathe heavy, I woke up in the morning with back aches that would last ALL DAY, and well, my clothes in my closet really weren’t fitting well at all. It was embarrassing, but I had no idea how to start. Losing 120 lbs. blew.my.mind.

Now, I’m not the most efficient when it comes to weight loss, but I’m only human. I’ll admit that there were some months ::cough March November December cough:: where I lost way less than usual per month. However, in the end, I averaged 1 lb. each week, and heck, that works for me. 🙂

Since we’re well into the new year, I figured I’d share on here my health/fitness goals for 2013.

  1. Reach “Onederland” (199 lbs.). I don’t think I’ve seen this weight since middle school. That was 15-16 years ago, y’all. For fun, I actually asked my Mom not to give away my middle school cheerleading uniform so when I reach this weight, I can put that outfit on (probably with another shirt and shorts underneath, of course) and feel pretty darn awesome. Wouldn’t that be the coolest? (or weird…I don’t care..I’m still doing it)
  2. Run a 5K with no walking breaks.
  3. Attend a spinning class.
  4. Do 10 REAL push-ups.
  5. Run 250 miles total this year.
  6. Finish a 10K.
  7. Finish Jillian’s 30 Day Shred program (doing it for 30 days non-stop).

I’m so excited about what this year could bring. I feel SO motivated to reach those goals, and can’t wait to share more of my weight loss journey with y’all.

Also, I seriously cannot say this enough. Thanks so much for your constant support. I’m not sure I could have done this without the support of family, friends and you guys!

Shrimp Creole

January 31, 2013 by Amy 1 Comment

Shrimp Creole

I find myself completely stoked about this year’s Superbowl. While the Saints aren’t in it, it’s going to be held in New Orleans, which is where I’m from (well, a suburb of New Orleans, but close enough). Every time New Orleans is on the nation’s radar (for a good thing, at least), I feel a small sense of pride. New Orleans has been through a lot, and it’s just wonderful to see New Orleans back to being a prime tourist city again. Seven years ago, I remember going home for the Mardi Gras holiday, and going to my first post-Katrina parade. New Orleans (months later, mind you) still had a mildew-y smell. You could still see those “X”s spray painted on searched homes, as well as the water line stains on homes from the flooding.

While it was a sad sight to see, I think Mardi Gras that year allowed everyone to temporarily take their minds off of the damage and just simply enjoy New Orleans the way we all knew how. Stand on the neutral ground (or sidewalk), wave your hands in the air, take in the high school marching band music and catch/wear beads until your neck ached. Mardi Gras (the family version, at least) is the best!

Now, New Orleans is doing a LOT better than it was in February 2006, obviously. It’s mostly back to normal, but if you drive to certain parts of the city, there’s still some rebuilding happening. I’m so happy to see New Orleans hosting it’s first Superbowl since Katrina. With Mardi Gras being the week after, this whole shin-dig is being called Super Gras. 🙂 I mean, these tourists have it made…they can have a hurricane in one hand and king cake in the other with their jerseys and face paint on, and no one will give them a second glance. New Orleans is really the best. (hint hint: food blog conferences take notes please?)

Since my husband and I have been counting calories, I haven’t been cooking much Louisiana cuisine. I still enjoy gumbo and jambalaya from time to time, but to have a full pot of that in our house? I just can’t do it lol! However, not ALL Louisiana cuisine is heavy in the calories. Let me introduce you to a wonderful dish called shrimp creole. It’s a wonderful tomato-based dish that is commonly served over plain rice. Now, I know…tomatoes can be boring, but there are layers of flavor in this dish. You start with making your own shrimp stock (using the heads and shells),  and I swear, it’s worth it. Just make it. 🙂 When it comes to cooking the dish, it starts with the “holy trinity” (as every good Louisiana dish should…except for bananas foster…who wants that in their bananas foster? ha!) and then tomatoes/fresh shrimp stock/white wine. Are you hungry yet? I’m tempted to take the leftovers out of the freezer as I’m writing this post!

Now, fair warning…this is a SPICY dish. If you need to tone it down, feel free. You can play around with the spices if you want it a little milder. I swear, it will still taste great!

Shrimp Creole
adapted from NOLA Cuisine

Ingredients:

  • 2 lbs. peeled and deveined Shrimp (save the shells and heads to make the stock)
  • 2 tbsp. butter
  • 1 tbsp.vegetable oil
  • 1 large onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1 small green pepper, finely chopped
  • 2 tbsp. cajun seasoning (I use Tony Chachere’s)
  • 2 tbsp. tomato paste
  • 20 oz. of canned fire roasted diced tomatoes
  • 1/2 cup dry white wine
  • 2 cups shrimp stock (recipe)
  • 2 tbsp. minced garlic
  • 2 bay leaves
  • cayenne pepper, to taste
  • kosher salt, to taste
  • 1 tsp. black pepper
  • 1 tsp. white pepper
  • 1 bunch fresh thyme
  • 2 tbsp. tabasco sauce
  • 1 tbsp. worcestershire sauce
  • 1/2 cup green onions, green tops thinly sliced
  • 1/8 cup chopped fresh leaf parsley

Directions:

  1. Melt the butter, along with the vegetable oil, in a dutch oven over medium high heat. When the butter begins to foam, add 1/2 cup of the onions. Cook the onions, stirring often, until the onions are a golden brown color. Add the remaining onions, as well as the celery, bell pepper, 1 tbsp. of the cajun seasoning and a pinch of salt, and reduce the heat to medium. Cook the vegetables until they are soft.
  2. Add the tomato paste to the vegetables, stirring constantly, until the paste begins to brown. Then, add the diced tomatoes and another pinch of salt. Stir everything together, and cook the mixture until the tomatoes are starting to break down a good bit. Add the wine and turn the heat until high, until most of the alcohol burns off (a couple of minutes). Add the shrimp stock, remaining tbsp. of cajun seasoning, garlic, bay leaves, black pepper, white pepper, a little bit of cayenne (to taste), as well as the thyme. Bring the mixture to a boil, and then reduce to a simmer. Continue simmering the mixture on low for another 45 minutes.
  3. Add the hot sauce (you may want to add less if you’re sensitive to spice) and worcestershire sauce. Season the sauce to taste with salt. At this time, season the shrimp with 1 tbsp. kosher salt and a pinch of cayenne. Bring the sauce to a boil again, and then reduce the heat to low, adding the shrimp in. Let the shrimp cook in the sauce until cooked through, which will only take a few minutes at the most. Add the green onions and parsley just before serving. Serve over plain rice and enjoy!

Monster Cookies

Monster Cookies

In the 13 months that I’ve been on my weight loss journey, I’ve never found myself as challenged as I am this month. Last January, when I started counting calories, I was on a weight loss high. I was dropping weight left and right, and it was completely motivating to stay on track. This January, however, my weight isn’t coming off as quickly as it did (of course), and for some reason, I keep having a raging craving for all things sweet. I usually have some awesome willpower to say “no”, but I’m finding that I can’t trust myself lately.

Example: I bought a king cake for the first time this season. That same day, I ate THREE slices. The scale went up 2 lbs. ::sad:: Must.find.willpower.ASAP!

Now, I find that I’m improving a bit since Christmas. Y’all….the holidays had a ton of food. It all started with a cruise that my husband and I went on. Unlimited food that was already included? Well, let’s just say five pounds later I found myself standing on the scale in awe. You would think my mind would say GET BACK ON TRACK, but no…my mind said WHERE’S THE CHOCOLATE? Ugh.

So, all of the candy had to go. All of it. The best way I’ve discovered to get rid of a bunch of random candy? Add oatmeal and peanut butter and make some monster cookies! This was my first time making these cookies, and y’all….I think these were a worse temptation than the darn candy! I had to revert back to the days when I couldn’t resist baked goods, and immediately wrap the cookies in saran wrap, and ask my husband to just take them to his office. I know…I really need my willpower back, y’all. My husband told me some people took 5-6 of these cookies with them, so I know they were a hit in the office!

Monster Cookies
Source: adapted from Paula Deen

Ingredients:

  • 3 eggs
  • 1 1/4 cups packed light brown sugar
  • 1 cup granulated sugar
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 12 oz. creamy peanut butter
  • 1 stick butter, softened
  • 1/2 cup M&Ms
  • 1/2 cup assorted chocolate candy (chopped)
  • 1/2 cup chocolate chips
  • 1/4 cup raisins
  • 2 teaspoons baking soda
  • 4 1/2 cups quick-cooking oatmeal

Directions:

    1. Preheat your oven to 350 degrees, and line two baking sheets with parchment paper or silicone baking mats.
    2. In a mixing bowl, mix the eggs and sugars for about a minute on medium, or until mixed well. Scrape down the bowl and add the salt, vanilla extract, peanut butter and butter. Mix everything on medium high for 2-3 minutes. Scrape down the bowl and using a silicone spatula or spoon, stir in the M&Ms, chocolate candy, chocolate chips, raisins, baking soda and oatmeal.
    3. Scoop the cookies out with a medium sized scoop, allowing 2 inches between each cookie, onto the already prepared baking sheets.
    4. Bake the cookies for 8-10 minutes, making sure not to over-bake the cookies. Allow the cookies to cool for about 3-5 minutes on the baking sheet before transferring the cookies to wire racks to finish cooling. Enjoy!

Handmade Christmas Stockings

January 23, 2013 by Amy 1 Comment

I remember taking a knitting class in college, and learning how to make something simple like a scarf or a washcloth. My instructor always showed us the possibilities of knitting, but I honestly never thought I could ever grasp the idea of the more advanced projects (like sweaters and socks). However, one day while browsing Ravelry, I came across a stocking pattern. It had 5 or 6 colors involved, and the novice knitter in me thought…man, there must be a TON of knots all over the back of the stocking. I had no idea how to weave in colors then, so I thought everything was knots, of course.

Then, the crafting bug hit me when I was on the stocking aisle one year. We bought these simple stockings for our mantel, but I just wasn’t happy with it. I wanted something much more personal with more meaning. I figured there had to be an approachable way to make those stockings that I saw on Ravelry, so I did my research. It really didn’t seem that bad, so I bought some red/green/ivory yarn and took the plunge. I started working on these around Halloween, and didn’t finish until early December. I saved the extra yarn specifically for more stockings in the future, whether it be more furbabies or possible human babies. A gal needs to be prepared. 😛

Stocking Progress

Some knitting notes: For my and my husband’s stocking, I used charts that were included in the pattern. For Millie’s stocking, I googled dog fair isle charts for the paw, bone & fire hydrants. To make the rows fit, I drew my own charts based off of some shapes that I found. I used the duplicate stitch to add our names and ornaments to the trees on my husband’s stocking. I also took notes from Ravelry members, and decreased stitches EVERY round for the toe and heel, instead of every other round.

I’m so happy with how these came out. I had to refer to YouTube quite a few times, but it eventually worked out. I haven’t been able to line them yet, but that will be my project for next year. 🙂
